Spicy Tomato Soup (Serves 6)

Ingredients:

1oz Butter
2 Onions (peeled,chopped and coarsely chopped)
2 Cloves of Garlic chopped
1 Tbsp Plain flour
1 litre/ 2 pints Veg/Chicken stock
2 x 400g cans of chopped tomatoes
salt and freshly ground pepper
1 tsp of crushed dried chillies

Method:
  1. Melt the butter in a large pan over a medium heat.
  2. Add the onions and garlic and cook gently, stirring occasionally. (until soft)
  3. Add the flour and cook stirring for 1 minute.
  4. Gradually pour in the stock & then the tomatoes
  5. Season with salt and pepper and bring to the boil.
  6. Cover the pan with a lid and simmer on a low heat for 20minutes.
  7. Gently and carefully transfer the soup to a blender and whizz until smooth.
  8. Rinse out the pan.
  9. Return the soup to the pan and heat through.









Garnish with cream and fresh basil leaves.
