Ingredients:
400grams of brown pasta
2 tbsp olive oil
500g Minced beef
1 onion
3 cloves of garlic chopped
1 red pepper
1 yellow pepper
1 chili (optional)
400g tin of chopped tomatoes
1tbsp tomato puree
1 can of kidney beans
1 tbsp of brown sugar.
Guacamole, sour cream and lime wedges for serving presentation
Method:
- Boil water and put rice in pan with lid on highest power until it boils, then turn it down to 1-2 and allow simmer.
- Put oil into another pan on high power followed by garlic and onions
- add mince and allow to brown before stirring
- chop and add peppers, chili, tomatoes and puree
- boil beans in a seperate sauce pan
- allow to simmer for 20 mins
- add tbsp of cumin, beans and sugar
- allow to simmer for 10 mins on low heat.
Try a new twist by serving it on top of tortilla chips the next morning for a cheeky lunch time snack
